How do I calculate a percentage change?

Subtract the initial value from the final one, divide by the initial value, multiply by 100. From 80 to 100: +25%.

Why don’t successive percentages add up?

They multiply. Two +10% raises give +21%, not +20%: 100 → 110 → 121.
